rice flour pasta, how can i make it?

I have tried to make pasta from rice flour (gluten free) but not succeeded.
I know how to make pasta with wheat flour and egg, traditional italian, but when i try with rice flour, it doesnt hold together, it crumbles. I would like to get the same result then the one you find in some gluten free markets.
Does anybody know?

Gluten Free Cake?

I have a friend who is allergic to gluten, and I would like to bake her a cake for her birthday later this month. Does anyone out there have an good recipes for gluten free cakes? Her favorites are chocolate and lemon (and lemon poppyseed). Thank you to anyone who can answer my question!

Gluten-free lemon cake

4 Eggs
¾ c Sugar
1 ts Vanilla
¼ c Vegetable oil
1 tb Lemon peel
2 tb Lemon juice
½ c Rice flour
¼ c Potato starch

Beat eggs and sugar together. Add vanilla, oil, lemon peel, lemon juice, and flours. Beat until smooth. Pour into greased 9"x9" baking pan. Bake in preheated 350 degree oven for 30 minutes. May frost or serve with hot lemon sauce.

Chocolate Cake (Gluten-Free)

1-3/4 cup GF flour
1/2 teaspoon zanthum gum
2 cups sugar
3/4 cup cocoa
1-1/2 teaspoon baking soda
1-1/2 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup milk (optional: add 1 teaspoon vinegar to sour)
1/2 cup oil
2 teaspoon vanilla
1 cup boiling water (optional: use black coffee instead for stronger flavor)

Combine dry ingredients in large bowl and mix. Beat eggs well, add milk and oil. Mix together both dry and wet ingredients. The batter will be thin. Pour into greased and floured 13" x 9" pan. Bake at 350 degrees for 35-40 minutes.

Has anyone had any problems with Purina (Fancy Feast) or Meow Mix?

I am looking for what to feed my cats since everything else that I had tried seemed to get recalled one way or another. I am looking for an aswer as to whether or not you are feeding your cats Fancy Feast wet food (gluten free flavors), Purina dry food, Meow Mix dry food, or Meow Mix Select wet food. Or has anyone had a problem with these foods. Please don't answer by referring to the recall list. I have seen the list dozens of times. I am being precautionary and checking with people who are using these products or know people who are. Please don't suggest the better quality premium brands because I have to order them online as there are no retailers in my area. I was feeding my cats healthy foods and all ended up recalled. I have also heard that purina uses products from the US and the corn gluten in Meow Mix dry is of US origin.

I feed my cats Meow Mix and have no problems and they love it.

Gluten free recipes?

I work at an after-school program for elementary kids with disabilities, and I have to come up with some cooking lesson plans. One of the kids in the program has autism and will soon be on a gluten free diet. What are some healthy recipe ideas that taste really good and are gluten free that I can use so that the child can be included with the cooking activities?

what are your favorite GF recipes, I am especially looking for easy and cheap dessert recipes, pizza crust, pie crust, etc. these recipes also have to be free of corn, banana, garlic, vanilla and pork! My 13 yo has many food allergies, gluten being the most difficult. She loves to cook so anything that she can cook herself and eat would be great!

Kashi is not GF, it is made with Hard Red Wheat.

Perky's(2 rice based) is my fav cold cereal. Hot cereals Cream of Rice, Quonia Flakes & some oatmeals like MCCann's.

Basically i need an " all purpose flour " substitute.
I only like the taste of brown or white rice flour, or tapioca & corn starch. I need to know if they will work fine and how much Xanthan gum do I use if any?

When my husband was first diagnosed with Celiac Disease I was freaked because I had no idea how to cook or bake gluten free. Luckily, I went to the local library and found several gluten free cookbooks written by Bette Hagman. She has developed her several gluten free flour mixes that work wonderfully for different things.

Here's the Bette Hagman's Featherlight Gluten Free Flour recipe. I use it the most.

FEATHERLIGHT RICE FLOUR MIX
(called Featherlight mix in recipes)
Rice flour (1 part)3 cups
Tapioca flour (1 part)3 cups
Cornstarch (1 part)3 cups
Potato Flour (not potato starch) (1 teaspoon per cup)3 TBSP

** Special note: If you are wanting to bake a cake with this flour, use 1 1/2 cups rice flour and 1 1/2 cups sweet white rice flour. The sweet white rice will help the cake to stay moist longer.

** I answered the Xanthan gum question before but I'll answer it here as well. You don't add the xanthan gum to the flour mixture. You normally add the xanthan gum to the recipe when you mix the dry ingredients. The ratio is usually about 1/2 tsp xanthan gum per 1 cup of GF flour.

considering a gluten and casein free diet, is it difficult?

i am considering trying a gluten free, casein free diet for my son, has anybody else done this? how difficult was it? what were the results?

I put my son on a gluten free diet for the treatment of his autism spectrum disorder (had read about gluten AND casein free but decided to go with just 1 first). My major difficulty in doing this was my husband who says A>I can't DEPRIVE the child and B> I can't spend any extra money on his diet.
My solution was to come up with substitutes for their favorite foods - the really hard ones are
Spaghetti ~ use spaghetti squash
Lasagne ~ use very thinly sliced eggplant or zuchinni (sliced long way) both of those are really bland and soak up flavors from the spices and tomatoes really well.
Pizza ~ I make my own crust using a mix of soy and buckwheat flour
Breads of all sorts including sweet rolls, pancakes, and regular cakes ~ I use a mixture of potato, rice and soy flour for light ones and potato, rice and buckwheat for the darker ones.
This has worked so well that my hubby isn't even aware of why HE's losing weight or that I have changed anything at all.
The results for my son, however; have been so dramatic that within 2 weeks of going on it the school was calling me to ask what I was doing different. If he does eat something with gluten in it, watch out world, he becomes very agressive, combatative and generally a pain to be around for 2 days, so we have to really watch what is on the school lunch menus. This past week out of 10 lunch menus only 1 was suitable for his needs and he would NOT eat that 1. He has a vast improvement in areas of
concentration, communication, energy and a very good side effect healthwise is that he has lost 5 points off his previously boderline obese BMI in the past 5 months while feeling better than he ever has. The elimination of the gluten made such a drastic difference that we did not even bother going on to the casein free part of it as that would have been depriving this particular child.
A typical lunch that he takes to school is 3-5 oz of lean meat, a sack of veggie sticks with a container of yogurt for dipping, a piece of cheese, a piece of fruit and a single serve bottle of juice.

For snacks, how about trail mix/tropical mix, shelled nuts, balti/Bombay mix or Japanese rice crackers (from the ethnic store), dried fruit especially apricots, or Corn Thins with whatever topping you like.
