Gluten Free / Celiac Disease?

I have been feeling all wrong since I had my flu shot in November. I have had periphreal nueropathy, headaches and just a feeling that something isn't right. My mother is a first year nursing student and had a lecture on celiac disease. Everything fit, even things that I really hadn't thought about. I went to my DR. and had the blood test. 2 of the 3 test came back positive and one came back negative. I started the gluten free diet and was on it for 2 weeks before my biopsy which came back normal I am still on the diet and am feeling tons better. I am interested to hear other experiences with the disease and would to have some good recipe ideas I am thinking about putting my three year old on the diet with me even if she doesn't heve the disease I think it would benefit her. Also any items that you know of in the grocery store that are natrually gluten free rather than specialty items would be greatly appreciated.

After my mom tested positive for celiac disease, I had myself and two girls tested. My youngest and I tested positive. My blood tests came back like yours - two positive and one negative. My GI Dr. and my daughter's pediatric GI Dr. were insistent that we continued eating gluten before our biopsies. Your negative biopsy could be a false negative due to your being on the diet.

We have gone gluten-free as a family. We've started eating a lot of Mexican, Indian, and Thai food. Many of the Indian and Thai foods are labeled as gluten-free. I find them in the International section rather than the gluten-free section.

We're lucky enough to live near several grocery stores that are good about labeling their own items are gluten-free: Wegmans and Wal-Mart. They make it easy to find salad dressing, BBQ sauce, marshmallows, cereal, etc that are in the regular sections that are ok to eat.

As far as name brand products, check manufacturer's web-sites. Hormel, Frito-Lay, and others have great gluten-free lists. Labels always need to be checked closely because recipes can change quickly but we eat Bush Baked Beans, Rice Chex (newly gluten-free), and Delimex Taquitos for example.

One of the best things that I have found are Corn Thins by Real Foods. They are like rice cakes but they are thin enough to eat like a sandwich. My kids eat PB&J on them all the time.

Concern about a GFCF diet for toddler?

I want to start my 16-month-old son on a gluten-free casein-free diet (he was diagnosed with global delays 2 months ago, not severe at this point). I think I got a pretty good handle on what foods are off limits and what is allowed, but I have the following concern:

We have been using bread crusts and crackers (NOT soft chewy cookies) to teach my son to self-feed. Now that bread and crackers are out, I need to find a GFCF substitute which is reasonably similar in taste and texture so that he can continue developing his self-feeding skills. Any suggestions? Once again, my son does not like soft chewy cookies.

Hi. Here's my fave toddler friendly GF Ideas–do NOT know if all are CF, but most should be.

Glutino brand Breakfast bars (these are like nutrigrain bars so they are soft and chewy)
Glutino cereals, especialy Honey Nut is much like cheerios
Kinnkinnick company www.kinnikinnick.com (double check that speling on google!) has lots of great bread products, pastries, donuts, etc. Their site breaks up the allergens in each product and most are CF.
Tinkyada pastas are Great and kid friendly.
Ener-G crackers are good,a nd GLutino has a good ritz style crackers. (I'll give u sites where to find these)

Glutino also has pizzas but I dont think they'er CF. However, Kinnikinnick has crusts that u can make our own pies with.
Also Whole FOods markets has TONS Of GF stuff and their own line of baked goods and mixes that are VERY good.

Gluten Free/Casein Free Diet?????????????

my son has just gone 2 he is very impulsive and has got the energy of about 10 kids, he is going through a phase of smacking etc, wants to grab out at everyone and everything, he has weetabix for breakfast and always a sandwich for lunch and he loves his milk, he is a good eater and will only stop eating fruit when you stop giving it to him, also loves veg. Do you think it is worth looking into his diet and maybe removing the wheat and milk?

Just make sure he is getting all the vitamins, fiber, and calcium he needs. I don't see why not. I quit milk and wheat myself and a lot of my health problems got better.

is it ok to give my son corn puffs?

he is 7 months old and doesnt have any teeth but he loves to eat i was wondering if i can give him corn puffs for a snack… they are made from corn only without any additives and gluten free

Oh yeah. I gave mine them at five months cause they melt in their mouths. My doctor told me to give him one at a time since at the time he did not have teeth, and could have a possible chance of choking. He never has though. Your son will like them I bet.

Definately. Try Whole Foods Market. There's another place over by Best Buy at Brentwood Blvd. I can't remember the name to save my life but it's a HUGE store. They have camping gear to clothes to food. There's also a place off Hanley back by Eager Road, Trader Joe's. They have everything. Schnucks and Dierbergs have certain sections that should contain or not contain what you're looking for.

Gluten intolerance or something else?

After catching an awful virus type thing last summer i havent been right. Exhausted all the time, with the virus coming back when over stretched. Since before xmas things have gotten worse with chronic diarreah in the mornings, extreme fatigue, aching joints, mood swings, receeding hairline, under weight, bad night-sweats - the list goes on. The Dc unexpectedly said i was depressed although this came as a shock as i have been depressed before and it never felt like this. I also have mild lupus although don't usually have symptoms. My thyroid is slightly slow after one blood test. I've had a hair analysis that showed i am defecient in vit B6 and chromium, that i have a virus and that i'm intolerance to wheat and oats. I've been gluten free for 2 weeks - the Diarreah is a little better but i've been ill with the virus again and now i'm on antibiotics for a kidney pain. I have chronic headaches recently. Long list of possibles, but if any one has any ideas please advise.x

If you are on a gluten free diet remember to look at the pills you take as many contain gluten to hold them together. Also watch the foods you eat as some ready to drink juices can contain wheat products. The other thing is if you are on antibiotics you need to take probiotics to prevent yeast. Get the diarrhea checked out as you may have C-diff from the antibiotics. Also consider seeing an endocrinologist to get everything checked out and treated.

I just got back from the doctor and he is very concerned about my absortion of vitamins and minerals. My iron and B 12 are particulary low. I will have to take B12 shots. They are also sending me to a GI Dr. I have already been on a gluten free diet for over a year. Any ideas what could be going on?
I am asking because my doctor was CLEARLY not telling me something! He was hiding something and that is what is freaking me out! It will be a month before the GI apt. Oh yeah, I'm being sent to a Eurologist (not sure about the spelling) to have my liver checked also! No, I am not an idiot. It is definately freaky to know that your doctor is not telling you something!

Hi. He is probably sending you to the GI doc to be checked for Celiac DIsease, IBS, Crohns or other gastro problem. Obviously Celiac Disease is the first thing I"d get checked since you've already been on the gf diet for a year. However, you need to be consuming gluten for the tests for Celiac to be accurate. SO they may be looking to see if u have something else besides that (the GF diet should be working IF u are following it correctly and that can be hard.) It can take months and months for the body to heal on the gluten free diet and for your absorption of vitamins and minerals to stablize, especiallyi f u are inadvertently eating gluten and not realizing it.
Who put u on the gluten free diet? Be sure your GI doc knows this before u do any testing. Only the genetic test for Celiac can be done while eating gluten free.

Feeding a child with Celiac Disease?

My daughter is about to turn 6. She is having a b-day party and one of her friends was just diagnosed with Celiac disease. I need tasty treat ideas to serve this girl. We are having lunch and then cake. I know I can go to a health food store and get her a gluten free cake or cookie for when the b-day cake is served but what about a lunch and snack foods? Any ideas on kid friendly lunch and snacks? I really know nothing about the disease except no gluten but don't even know what that excludes (except I know I can't serve the orginal plan on pizza and chips).
Thanks for your response. It was helpful. My daughter is a vegetarian and my niece is a type 1 diabetic so I know how if feels for children to get invited to parties and not have their eating needs met so I am doing my best to make sure this little girl doesn't feel left out or sad in any way.

You can do burgers (no bun unless her mom/dad provides it) and hot dogs, chips and salsa, fruit salad and veggies, stonyfield yogurt is always good with kids (cert. gf too, and not all yogurts are gf, so stick with stoneyfield).
Ask her mom/dad if she can have dairy as well, a lot of celiacs can not have dairy (lactose intolerant).

Depending on where you live, gluten free desserts other than cookies are rather hard to come by, def. do not wait until the last min. If you are having trouble finding anything, ask her parents, I am sure they have a bag of Mi-Del or Glutino stuff nearby.

Hi, I'm a vegetarian too! So here is another suggestion that I just remembered:
Amy's Organics has a gluten free frozen pizza that you could make her.You would need to get a disposable pan to cook it on though because the one you have would be too glutened to use for her. Then you could order pizza for the other kids and still get chips ( just get gf ones), and then do fruit kabobs or something like that.

Amy's is usually in the organic frozen food section, it will say "gluten free" right on the box!
I think you can go back to plan A, then your child won't have to have meat at the party and everyone can have pizza. Glad I remembered! You can also make her one from scratch if you can't get Amy's. There are lots of gf pizza dough mixes out there! I like the bob's red mill ones!

Are you at a higher risk of Type II diabetes if…?

…you are young, a sugar addict, but you are still quite slender (due to high metabolism and moderate caloric intake). Basically my sugar/starch intake far exceeds the recommended fraction of my diet. I have celiac disease so I can't eat gluten (in wheat, barley, and rye), so my grains are primarily rice and corn (both rather starchy). There are healthier grains that are safe but they are too expensive for my college budget. Most gluten free mainstream food are heavy on the sugar and starch.

The main risk factors for type II diabetes are weight, abdominal obesity (beer gut) and dislipidemia (high cholesterol, triglyceride's in the blood). You also have to have a genetic predisposition to get it.

Type I diabetes is linked to coeliac disease, as they are both autoimmune.
