can I use gluten free pancake mix as a substitute for bisquick in quiche?

gluten free baking help?

my toddler son is on an elimination diet, and i have never cooked with anything other than wheat based flours. Which flour would be better and taste better to use for cakes and bisciuts out of rice flour and soy flour? I have no idea!! Thanks

You will want to mix flours rather than use all one. Bob’s Red Mill makes a gluten-free blend. I suggest looking up recipes online, as different blends will give you different flavors and textures.

Grab a copy of Living Without from your local co-op, health store, or big bookstore. It’s a magazine for the gluten-free.

You can use rice, soy, oat, corn, garbanzo (note: distinct taste), and I think they even make quinoa flour now.
