gluten free pumpkin deserts?

We are having my step sons over the day after thanksgiving for dinner and dessert. They are on a gluten free diet. I am making beef stew and cornbread for dinner. For desert I was thinking about something with pumpkin or sweet potatoes, but not pie. Any ideas?

Pumpkin Dip

3 oz cream cheese

1 cup powdered sugar

1 cup pumpkin

1 tsp pumpkin pie spice

1 8oz tub of cool whip

Mix all together.

Good for dipping graham cracker sticks, ginger snaps, etc.

Healthy lunch Idea? (after thanksgiving) help PLEASE.?

I ate about 1300 cals yesterday for thanksgiving.
but I felt so bloated, fat, gain weight.
and this morning I dont feel too much better. I still feel full and just like…I dont know how to describe it.

but at 11:30 am i am going to eat lunch.
I need something with energy and substance (so no salads) because at 1 pm Im giong to workout..and run 5 miles, crunches all ways, leg lifts, and some arm weights.

I was thikning 1 cup of uncooked whole wheat pasta (200 cal), 3 oz grilled skinless chicken (110 cal), one pear, one small apple, and some grapes.

For dessert I was thikning 2 gluten free cookies (100 cal), or a chocolate granola bar of 80 calories.

Is that healthy? or will it make me gain more weight? I just feel gross now. would the pasta be no?

help!!
either help me come up with lunch idea or something. thanks

I think your lunch sounds great. Don’t be too hard on yourself; pretty much everyone overindulged.

For my food technology coursework i am researching gluten free desserts.
Included in my coursework i need to make at least 6 desserts that are gluten free, so does anyone have any ideas of what i could make?

Danish Apple Pudding

Ingredients: to serve four

1lb / 450g cooking apples
2 oz or 50g sugar
2 oz or 50g butter or margarine
2 oz or 50g ground almonds
1 egg

Instructions:

Peel and core the apples and cook with the minimum of water (microwave with no added water). Add sugar to taste.

Cream the butter and sugar together and beat in the almonds. Beat the egg on its own and then beat into the almond mixture.

Spread the cooked apple in a pie dish and then cover with the almond mixture.

Cooking:

gas mark 4 350°F 180°C

Cook for twenty five to thirty five minutes or until lightly set and golden.

Serve hot or cold with ice cream, whipped cream or yogurt.
