In order for food to be gluten-free, does it have to say on the label “gluten-free”?

Or can I rely on that if it doesn’t mention gluten on the ingredient list that it is gluten -free?? Is gluten named something else on labels, or is it always called gluten???

I would not rely only on gluten’s absence from a list of ingredients. Gluten is a natural protein part of many grains (wheat, barley, rye). It is typically absent from grains like wild rice, corn, buckwheat, millet, amaranth, quinoa, teff, oats, soybeans, and sunflower seeds. It is possible, however, for each of these to be processed near or with gluten-containing grains.

As far as I know, a food is only likely to include gluten if it’s grain-based (like breads, cereals, pasta, etc) or if it’s heavily processed. I wouldn’t worry about gluten in, say, fresh, raw, or frozen vegetables or fruits or most minimally processed meats. Just look for wheat, barley, and/or rye on an ingredient list; if those are included and you can’t have gluten, avoid those foods. If you don’t want to worry about it, you could always just make your own bread using gluten-free grains (these breads are often a bit more dense) and/or stick with oatmeal and quinoa (my two favorites) for breakfasts & side dishes.

Otherwise, play it safe and look for the gluten-free label.

Try to eliminate sugar from your diet as much as possible. This includes fruit except the low sugar berries and granny smith apple. Try to lower your grain intake, but if you do eat them make sure to properly prepare them. Soak gluten free grains for at least 12 hours before cooking! Soak gluten grains for at least 24+ hours. Try to seek out good quality grass fed animal products such as raw milk, raw eggs, and meat! Also choose organic vegetables and green leafy vegetables!
