Making chocolate?

How hard is it to make chocolates? Anyone done it?
My boyfriend's mum is having a hard time at the moment and she can't have gluten. There aren't many "nice" boxes of gluten free chocs so i thought it wouls be more personal to make some myself. (and i'm arty so making a pretty box n the choccy decoration won't be hard)
Does anyone know any good recipies?

Celiac disease, what is it? What do i do when I have it?

I need recipies and much more info on celiac disease (gluten free)! my mom has it. She is gluten and and milk lactollerant, but she still is very sick. She has gone to many Dr. but they cant help her! Any info could save her life! Plaese help!
She gets weak and tired. She gets cramps, she also has leg pains. My mom gets dizzy and lightheaded as well. Dr. dont know what it is, thay say she has celiac disease. Does she? I need recipies and alll the info I can get!

As for Celiac Disease and Gluten Free … to start out, your mother will need to eat simple foods with minimum seasonings, additives, etc. The more natural and non-processed the better. Her gut needs time to heal.

This is a good time to educate your self on the many places where gluten may "hide." Natural Flavorings can sometimes hide gluten grains, especially barley. Watch out for anything labeled "Malt."

Vinegars — even those which are not derived from gluten grains can be very hard to handle for new Celiacs — but after the gut has had time to heal, these can be included. Apple cider and balsalmic vinegars are fine — watch for anything that is a flavored vinegar or which is malted.

All foods, beverages, medications (over the counter and Rx) will need to be checked and verified as gluten free. ANything that can end up in the mouth needs to be looked at as suspect.

www.celiac.com has some good info — in particular, look for the Safe/Forbidden Lists — these are the "strange" ingredients that sometimes have gluten.

gluten free, dairy free please

Yes, I do this all the time because I am not so crazy about sugar.

I do ham chunks and cheese (you can omit the cheese) and then top it with an egg, over easy.

Breakfasty-meats are good with a little maple syrup (the real stuff).

I use a long-cooking oatmeal and then add the savories (with a bit of S&P) during the last couple minutes. If I do add cheese, it goes in grated after it is done. You can always use a vegan cheese product.

Sausage is good in there, too!

I have it myself. I have been on the gluten-free diet for two years, but my family and i are getting tired of the same old, same old gluten-free food. Do you know anyone with this disease and do you have any reccomendations for recipies? Also, tell me what symptoms you had before your diagnosis.

My mom, myself, and my 4 year-old daughter were all diagnosed with celiac disease in the last year. Before our diagnosis, our symptoms were vague. My mom was tested because she was really anemic. I was diagnosed with osteoporosis at an early age. I was really anemic during my first pregnancy and have developed other auto-immune disorders. My daughter had skinny arms and legs but a big tummy. She would randomly start throwing up or having diarrhea. She was never deathly ill but we knew something wasn't right.

As far as food, we've been doing best with ethnic foods. We've always been fond of Mexican dishes and have just switched from flour tortillas to corn tortillas. We had dabbled with Indian dishes before but eat them about once a week now. Many Thai dishes are naturally gluten-free. I tend to take Thai noodles for lunch.

We eat a lot of beans. We've always been big bean fans so this is not a change for us. We also have always been big soup eaters. We can no longer just pick up a can of soup so we make a lot from scratch. We'll often do cheese, crackers/chips, and veggies for lunch. My kids love PBJ on thin corn cakes.

We try to minimize the specialty products due to price and taste. We have not found a gluten-free bread that we are really happy with. I usually eat GF toast with jelly and some yogurt for breakfast but have pretty much given up on sandwiches. My kids like Fruity Pebbles and the store brand is marked GF. It is the new family favorite. We use it to make Crispy Rice Bars which are a big hit with non-celiac folks.

My goal is to focus on what we can eat rather than what we can't. So far, we've done ok on the diet. We know that we can always eat a salad if all else fails. I've started carrying Kraft's individual dressing packets with me to feel secure. We also eat out at Wendy's alot - chili and a frosty. These things make me feel "normal."
