vegitarian, gluten and dairy free lunch box?

I need some simple vegetarian recipes that are easy to make but really tasty too - they have to be able to be eaten cold and stored in the fridge all night to be eaten the following lunch time and they have to be dairy free and also not contain any wheat, rye, barley or oats (gluten) - can anyone suggest any of their favourites?

I would suggest the following:

• black bean dip
• hummus
• sesame crackers
• carrot, yellow pepper and jicama slices
• orange slices
• popcorn
• healthy cookies
• coconut water

    Well, I love celery sticks or carrot sticks with houmous. You can also make a nice salad like a pasta salad, but either using rice-based pasta or cooked rice. Then there's bombay mix (savoury) or trail mix or tropical mix (sweet), all of which are almost always gluten free. Any veggie salad should be fine - avoid couscous, of course, as that is wheat based.

    For carbs, you can make a nice potato salad with cooked salad potatoes, a bit of onion chopped fine, all mixed with mayonnaise - a good quality one should be gluten free, but check the label. A big bowl of fruit to finish off, or a fruit salad with whipped soy topping.

    If people want cracker-type things, get some Real Foods Corn Thins, not the mixed grain type, but any of the other varieties should be ok (check the label), the sesame one is really nice. Have some olive oil margarine and some cooked meats or tinned fish or egg mayonnaise to put on top.
